Lentil Vegetable Stew

Ingredients:

– 1 tablespoon organic olive oil

– 1 medium organic onion, finely chopped

– 2 cloves organic garlic, minced

– 2 organic carrots, diced

– 2 organic celery stalks, diced

– 2 medium organic potatoes, peeled and cubed

– 1 cup organic green or brown lentils, rinsed

– 1 cup organic frozen peas

– 1 cup organic green beans, chopped

– 1 cup organic diced tomatoes (canned or fresh)

– 6 cups organic vegetable broth

– 1 teaspoon organic thyme

– 1 teaspoon organic rosemary

– 1 bay leaf

– Salt and black pepper to taste

– 2 tablespoons organic fresh parsley, chopped (for garnish)

Instructions:

  1. **Prepare the Base:**

– In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they become translucent, about 5 minutes.

  1. **Add Vegetables and Lentils:**

– Add the diced carrots, celery, and potatoes to the pot. Stir to combine. Add the rinsed lentils and diced tomatoes.

  1. **Add Broth and Seasonings:**

– Pour in the vegetable broth and add the thyme, rosemary, and bay leaf. Season with salt and black pepper to taste. Stir well to combine.

  1. **Simmer:**

– Bring the mixture to a boil, then reduce the heat to low and let it simmer until the lentils and vegetables are tender, about 30-40 minutes. Stir occasionally.

  1. **Add Peas and Green Beans:**

– About 10 minutes before the stew is done, add the frozen peas and chopped green beans. Continue to simmer until they are cooked through.

  1. **Garnish and Serve:**

– Remove the bay leaf and adjust the seasoning if needed. Serve the stew hot, garnished with fresh parsley.
