Ingredients:

– 8 slices organic whole wheat or sprouted bread

– 1 organic tomato, sliced

– 1 cup organic mixed greens or lettuce

– Organic pickles (optional)

– Organic lemon wedges (for serving)

Instructions:

  1. **Prepare the Chickpea Salad:**

– In a large bowl, mash the chickpeas with a potato masher or fork until mostly smooth, leaving some chunks for texture.

– Add the vegan mayonnaise, Dijon mustard, lemon juice, and apple cider vinegar. Stir to combine.

– Fold in the chopped celery, red onion, and fresh parsley. Season with salt and black pepper to taste.

– Lay out the slices of whole wheat or sprouted bread.

– On one slice of bread, layer the mixed greens or lettuce, and tomato slices. Top with a generous scoop of the chickpea salad.
