Black Bean Burger Magic

Ingredients:

For the Burgers:

– 2 cups cooked black beans (canned, rinsed and drained)

– 1 small onion, finely diced

– 2 cloves garlic, minced

– 1/2 cup red bell pepper, diced

– 1 cup breadcrumbs (whole wheat or gluten-free)

– 2 tablespoons ground flaxseed mixed with 6 tablespoons water (flax eggs)

– 1 teaspoon ground cumin

– 1 teaspoon smoked paprika

– 1/2 teaspoon chili powder

– 1/4 cup vegetable broth

– Salt and pepper to taste

**For Assembly:**

– Whole grain or sprouted buns

– Lettuce leaves

– Sliced tomatoes

– Sliced red onion

– Sliced avocado or guacamole

– Your favorite condiments (ketchup, mustard, vegan mayo)

Instructions:

  1. **Prepare the Bean Mixture:**

– In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

– In a pan over medium heat, sauté the diced onion, minced garlic, and diced red bell pepper in vegetable broth until softened (about 5-7 minutes).

  1. **Combine Ingredients:**

– Add the sautéed vegetables to the mashed black beans.

– Mix in the breadcrumbs, ground cumin, smoked paprika, chili powder, salt, and pepper.

– Stir in the flax eggs (ground flaxseed mixed with water) until the mixture is well combined.

  1. **Form Patties:**

– Shape the bean mixture into patties, each about the size of your palm. You should get 4-6 patties, depending on the size.

  1. **Cook the Patties:**

– In a non-stick skillet over medium heat, cook the patties for about 5-7 minutes on each side, or until they are firm and heated through. You can also bake them in a preheated oven at 375°F (190°C) for 15-20 minutes, flipping halfway through.

  1. **Assemble the Burgers:**

– Place each black bean patty on a bun and top with lettuce leaves, sliced tomatoes, sliced red onion, avocado or guacamole, and your favorite condiments.
